  1. Peel, pit and slice the mangos and avocado.
  2. Peel the carrots, if needed, and slice as thinly as possible.
  3. Trim and slice the scallions.
  4. Peel and crush the garlic.
  5. Peel and shred the ginger.
  6. Combine the oil and lime juice, and mix in the shredded garlic and ginger.
  7. Put all of the ingredients into a large serving bowl and toss well to combine. Season and serve immediately.
