fresh Brussels sprouts
1/4 cup (chopped)
dates
1/4 cup
Manchego cheese
1/4 cup
raw almonds, chopped
Dressings
1/2 cup
extra virgin olive oil
1/2 cup
lemon juice
2 Tbsp.
shallot, minced
1 Tbsp.
honey
1 Tbsp.
Dijon mustard
Directions
- In a small bowl combine lemon juice and shallots
- While lemon juice is breaking down shallots, use a food processor to shave Brussel sprouts
- Add Brussel sprouts to large bowl
- Whisk honey and Dijon into bowl with lemon juice and shallots until emulsified
- Add to Brussel sprout mixture in large bowl
- Combine and enjoy!
